Silver Fox Distillery started construction in January 2019. Officially opened in February of 2020. Prior to opening we were allowed to create stock and run recipes for development and though we had a catalogue of over 30 spirits at that time we worked hard to ensure we had 6 incredible spirits from our new stills, we also spent the time creating 5000L of whisky that would be barreled as soon as the barrels arrived. For two weeks we made spirits, waited for our barrel order and then we got hit with the Covid shutdown. For 5 months we made sanitizer and since we were a new establishment we had nothing to offer the hospitals that were calling for help, this is not something we saw coming and no precedence has ever been seen for such a demand. So yes, you may have already guessed that since we had not received our barrels and were not likely to see them till the fall, all 5000L of our whisky was converted to sanitizer and donated. This allowed us time to hit the fermenting and establishing resources for mash that we could run specifically for sanitizer. Inside the Distillery we have 6 fermenters each 1300L in size and that was not enough for demand so we brought in IBC 1000L Totes that were able to hook up directly to our system, ( we designed our system with expansion in mind) to the total of 26 fermenters on the floor.
During our first two weeks we entered the spirits category of the U.S. Open Whisky Championship.
Silver Fox Distillery placed in the top 5 distilleries in the competition.
Sugar Shack Maple won GOLD in category.
4 Peppercorns won BRONZE in category.
Amazing start for a distillery in its first year.
We also entered the Canadian Artisanal Craft Spirits competition and once again were overjoyed with the results
Foxshine 100proof Moonshine won Silver in category
4 Peppercorns won Silver and Best in Class
Tropical Thunder won Bronze in category
This brings our first year to 7 Awards! (Yes we are still smiling)
But WOW this was just the beginning!
We had no idea that we would achieve a second Top 5 Distilleries of North America then move to be awarded the Grand National Championship in the U.S. Open Spirits Competition, making us the #1 Spirit Distillery of North America in 2022.
This, all in our first two years of being open, we decided that after winning the top Award in 2022 that we would start over with all new spirits never entered in any competition and most were brand new.
Imagine our flat out surprise to be awarded with 6 new medals in the U.S Open Spirits competition and once again be awarded the Grand National Championship award for a second year in a Row, once again to continue as the #1 Spirit Distillery in North America.
As of May 2023 we have been awarded 36 spirits awards and have received a Gold award for our first Canadian Whisky. Cobra Chicken Canadian Whisky. ( Though sold out in record time we will have several barrels available in November 2023)
Though our customers say this is not a surprise to them we know that we face 1000's of distilleries in North America and feel humbled and blessed with our standings. But we won't rest, we are constantly developing new Spirits and expanding our portfolio with a look to the past and a aim on the future,
Advent Calendar
One thing we always wanted to bring to our customers was an affordable advent Calendar. We have always bought the Scotch Whisky calendar from the LCBO and have derived great joy sharing the offering of the day through December. Those calendars had 24 bottles of 30ml and often cost in excess of $350. It was a value we enjoyed so it was a yearly purchase. This was something we had planned from the very beginning and had made arrangements early for, unfortunately covid stepped in again and the company we had setup with did not survive the first wave. With everything encompassing our time throughout the summer to produce sanitizer including sleeping under the stills we decided to shelf the idea till 2021. Well that's what we thought! Late October we had started looking for shipping boxes to hopefully use in our online store we were developing and in walked De519n company. After discussions on shipping boxes for the online store we talked about our failure to be able to offer an advent Calendar for the 2020 holiday season. That is until he said he could have the plastic tray and boxes to us by the second week of November. Not that we were exhausted or anything but we scrambled to order bottles, each 50ml and design labels when Lisa turned to Mark and said we will have to have 6 repeats in the calendar. This was not desirable and thus was born 11 new spirits, 6 of which were part of the calendar and have become part of our everyday offering.
Long hours and often only 3-4 hour sleeps we were capable of having the Advent Calendar available on November 22. This was 24 bottles 50ml each with no repeats and was priced Just over $170, a significant savings compared to other offerings available and our Gift to our customers. Many of which gave the calendars for gifts to be started on January 1st.
Mark & Lisa
This is a picture from London comic con and the Canadian Dalek empire group. The Tardis and Dalek Emperor as well as 5 Daleks pictured in this image were made by Mark and Lisa. The Emperor was a group effort build at marks hangar.
Bessie is another one of Marks creations, which lives at the distillery. it is mostly complete and requires one more winter building season to be finished and driving on the road. Made from the original molds used to make Bessie on Doctor Who it is an exact replica on the exterior.
Over the years, Mark and Lisa traveled to various Comic Cons with the Doctor Who Society of Canada and The Canadian Dalek Empire to help raise donations for Children's Hospitals
Mark and Lisa have appeared at many events with there props and though the Emperor has yet to grace the Distillery, the Tardis is a prominent feature of the storefront and the whooshing noise of the Tardis is the door alarm.
Davros is presently in the Distilleries storefront and has been seen terrorizing many comic conventions floor. This is why Mark says he is so nice most of the time. All his aggression is expressed while being Davros.
Not just toys, many of Mark and Lisa's props have appeared on TV and a close look at the Tardis and you will see many of the actors signatures.
